HEADS UP FOR ANYONE TRYING THIS RECIPE:
I made the recipe and the ingredients in nino's recipe actually make enough egg batter for 2 batches of ramekins (ie 10 ramekins), but the caramel is only enough for 5 ramekins as shown in the video so you'll either have to double up the caramel measurements or make caramel twice.
I used soy milk instead of cow's milk, and coconut milk instead of heavy cream. I'm not sure if that is why my puddings came out with a layer of cooked/burnt egg batter on the surface. Anyhow, i would recommend covering the ramekins with foil to avoid this happening (this is done in most other creme caramel tutorials). Additionally, if using a fan oven, i would turn it down to 130C because it gets hotter than the temperature you set it to, and my oven ended up going up to 170C, which also contributed to creating the cooked/burnt layer on top.
If anyone can offer any insight as to whether or not the coconut milk and soy milk contributed to forming that weird layer on top, it would be much appreciated!
